A 3-year-old mixed culture sour ale made with the natural bacteria, juice, flesh, and peel of 80Kg of mandarins harvested from our favourite backyard here in Botany. After conditioning in oak barrels for 30 months and a lengthy rest in the bottle, this glassed asset offers a robust and assertive tartness upfront, transitions to an aged, musky citrus character mid-palate, and finishes sharp and clean with a soft carbonation. Designed to be enjoyed in the sunshine with excellent company.
