This pinot noir from our Seventh State is a lighter-bodied style with soft tannins.
The fruit was hand/machine harvested, then destemmed into open vats for cold soak followed by a warm wild ferment. Traditional hand-plunging was used to manage the cap, and the wine underwent malolactic fermentation while ageing in French oak barrels.
This elegant Pinot displays a bright crimson hue. Aromas of cherries and brambly fruits flow off the elegant nose, followed by earthy and savoury nuances. The delicate and fruity palate is brimming with cherry and berry flavours providing a marvellous tannin structure as well as weight to the wine.
It is an ideal pairing to wild duck, char grilled chicken and tuna.
