Isaac is the name of Teo Musso’s son. The fresh Isaac is made from raw wheat and flavored with coriander and orange zest from hand-peeled oranges grown on an organic farm in Puglia.

The cereal grains that Baladin uses for its beers are farmed organically, and are 85% locally grown. Baladin farms a total of about 450ha of land in Piemonte (near the brewery), Basilicata and Marche combined. They are the first beer company that was associated with the Slow Food movement, and from start to finish, it takes about 4 months from harvest, to fermentation, to stabilization of the beer before bottling. All of Baladin’s beers are non-filtered, refermented in the bottle and non-pasteurized. Baladin also uses six strains of native yeasts— “Lievita Madre” —in their production.
