Fermented from sticky sweet NSW Molasses for 2 weeks. 100% Copper pot distilled in our 600L copper pot still Calcifer. Aged at mercy of the Devils Wilderness NSW between 2.5YO to 4YO in Ex-Australian-Whiskey (Bourbon Style) barrels. Barrels are blended post maturation similar to a solera system to ensure consistency between batches.
Tasting notes: " Luscious almonds and vanilla entice, followed by sugarcane bark. Blackcurrant stalks bring depth. Citrus and honey dance on the palate. Fruity cask lingers beautifully. " 94/100 IWSC 2024
